Lentils and Rice

Ingredients
- 1 ½ cups lentils
- 4 cups water
- 1 teaspoon salt
- 2 cups onions, chopped
- 1 teaspoon salt
- ¼ cup olive oil
- ¾ cup rice
- 1 ½ tablespoon butter
- 1 to 2 cups hot water
- 1/3 cup lemon juice
- ½ cup olive oil
- as needed Greek salad
- as needed crusty bread
Instructions
- In morning, soak 1 ½ cups lentils
- An hour before serving, drain lentils and put in large pot
- Add 4 cups of cold water and 1 teaspoon salt to the pot
- Cover and bring to boil over medium high heat, then turn down to simmer and stir occasionally
- In a large frying pan, slowly cook 2 cups chopped onions sprinkled with 1 teaspoon salt in ¼ cup olive oil until soft and yellow
- Add cooked onions to lentil pot
- Wash ¾ cup rice and saute in 1 ½ tablespoon butter for a couple of minutes until rice becomes translucent then white again
- Add rice to lentil pot
- Add 1 to 2 cups more hot water to lentil pot, starting with one cup and adding more if necessary to finish cooking lentils
- Cook covered until water is absorbed
- Make dressing by mixing 1/3 cup lemon juice with ½ cup olive oil
- Serve with Greek salad on top and crusty bread on the side
